"2lb point cut Brisket
Braised for 4 1/2 hours uncovered on top of leeks & onions in beef stock, white wine & a splash of balsamic. Loads of lemon thyme, garlic, s&p roasted scored facing up and caramelized to perfection. Then used the braising liquids to make couscous."
