This tender banana bread is perfect as an after school snack, for dessert, or even breakfast alongside your morning coffee! A roasted banana batter comes together with dark brown sugar and fragrant hazelnut extract and is topped off with a layer of Nutella that creates a cute swirl and a perfect bite.

  • 3 large ripe bananas
  • 1/2 cup unsalted butter
  • 3/4 cup dark brown sugar
  • 2 large eggs
  • 1 teaspoon hazelnut extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/4 cup buttermilk
  • 1/2 cup Nutella

Method

  • Step 1

    Preheat oven to 350F degrees. Place bananas on a parchment-lined baking sheet and bake for 15 to 20 minutes, until dark brown in color.

  • Step 2

    Meanwhile melt butter in a small saucepan over medium heat, for 4 minutes, swirling to create a speckled, nutty brown butter. Set aside to cool.

  • Step 3

    Stir melted butter and sugar in a large mixing bowl to combine. Add eggs one at a time, fully incorporating between additions. Add hazelnut extract and mix to combine.

  • Step 4

    Whisk flour, baking soda and salt in a medium bowl. Set aside.

  • Step 5

    Peel bananas and place into a small bowl. Mash bananas with a fork or potato masher, then add buttermilk and stir to combine.

  • Step 6

    Slowly add flour mixture and banana mixture to wet ingredients, alternating all have been incorporated. Stir until just combined.

  • Step 7

    Line a 9x5" loaf pan with parchment paper and some nonstick cooking spray or butter. Pour batter into the loaf pan.

  • Step 8

    Melt Nutella in the microwave for 10 seconds. Mix and then heat for another 15 until very hot and pourable. Immediately drizzle melted Nutella all over the batter. Using a butter knife, swirl Nutella into batter.

  • Step 9

    Bake for 50 minutes to 1 hour. Allow to cool completely before slicing.
