We've got a meal plan filled with spring produce like peas, asparagus, and artichokes! Start the week off with with spaghetti squash, then ease into an easy vegan pizza with asparagus and artichokes on Tuesday night. We double down on the spring asparagus with Crispy Tofu and Roasted Vegetables and finish off the week with a cozy Split Pea Soup and braised artichokes

Prep: Most of these recipes comes together rather quickly, so there will be no Sunday prep this week! But if you'd like roast the spaghetti squash ahead of time feel free, it'll shave off 30-40 minutes from Monday night's dinner.
