This week's meal plan has an easy One-pot Pasta e Fagioli , marinated bean salad and a blood orange tart!  Start the week off with a veggie packed Italian stew, followed by a roasted cauliflower soup on Tuesday night. Midweek start marinating a chickpea and lentil salad that can double as dinner salad or quick desk lunch. We then end the week with Nicoise salad and blood orange tart.

Prep: Get a head start this week making the cauliflower soup or chickpea lentil salad over the weekend. Both recipes get better as the flavors meld and marry overnight.

Friday:  Make a grilled cheese using your favorite vegan cheeses to go along with any leftover Cauliflower  soup. Roast tofu to turn leftover chickpea salad into a hearty dinner salad, or mix and match your favorite ingredients into a new salad or lunch wraps! We recommend making a large batch of vinaigrette at the beginning of the eek to cut down on dishes and prep time!

WEDNESDAY Chickpea and Black Lentil Salad

With the help of canned chickpeas this salad comes together in no less than 20 minutes. French lentils are simmered for 20 minutes and then marinated in a bright vinaigrette along with chickpeas, celery, chives, vegan feta and cucumbers.
