We've got a spring meal plan filled with spring pea recipes, a cozy carrot soup and a zippy salsa made with green beans!  Start the week off with an easy farro salad then easy into Tuesday night with a roasted carrot and lentil soup. Chickpea crepes make an appearance midweek and can be filled with any spring produce you have on hand. A green bean salsa is the perfect addition to your next taco night or if you're in the mood to just snack for dinner. Finish the week off with a creamy cauliflower sauce pasta with peas and bitter greens! This week is full of delicious recipes!

MEAL PREP

Prep: Most of the week comes together rather quickly, but if you'd like to get a head start on the week prepare the farro and roasted carrot soup on Sunday. This will cut down on cook time and dishes at the beginning of the week.

Thursday Cauliflower Cream Sauce Pasta with Peas and Arugula

Friday Pick a low lift recipe and mix and match leftovers into bowls, wraps, salads or in a cozy soup or pasta at the end of the week. We highly recommend our new Spicy Sunflower Noodle recipe! If you skip the jammy egg, it's completely vegan and incredibly delicious!
