Sunday Supper and Prepping for the Week Ahead

 

Spend some time in the kitchen on Sunday preparing two pantry items you'll use throughout the week and beyond, a quick Marinara Sauce and a Slow-Cooked Chicken Stock.

 


Let's be honest, we all prefer homemade tomato sauce, but spending the whole day over a simmering pot is not always ideal. This classic marinara comes together quickly, and is perfect for a number of quick & easy dishes you can put together throughout the week. Freeze any extra in freezer-safe glass jars (be sure to leave room for expansion). 
 
 
With just a few, inexpensive ingredients you can make rich and flavorful stock to use throughout the week. The best part, it's pretty much entirely hands-off. Salad of the Week: Crunchy Celery Salad

 

Stock your fridge with a hearty salad that will stay fresh throughout the week. Here's one of our go-to recipes:

1 bunch of celery, cleaned and root end trimmed, sliced thinly on the bias
1 cup parsley, chopped
1/2 cup shaved parmesan
1/2 cup toasted walnuts, roughly chopped
For serving: lemon juice, olive oil & salt & pepper

Toss all of the ingredients together and store in an air-tight container in the fridge. Dress simply with a squeeze of fresh lemon juice, a drizzle of olive oil and salt and pepper right before serving to keep the flavors fresh and clean. This is also delicious with green apple and celery root matchsticks, just add right before serving so they don't turn brown.
