Aji de Gallina is one of Lima’s most beloved stews. The aji amarillo pepper not only provides heat but is the main flavor component of this dish. Use a rotisserie chicken to cut down on cook time and dinner can be on the table in under 30! Traditionally this stew is served with rice, hard boiled eggs, black botija olives and sprinkling of Parmesan cheese.
