Spring is in full swing, the days are slowly getting longer and the temps are rising as we inch closer and closer to summer. We start this week off with a light Penne Primavera and then an Italian Fennel Orange Salad on Tuesday. Add salmon, shrimp or chicken to complete the meal as a dinner salad. On Wednesday night build your own chicken sandwiches and if you're feeling up for it prep the chicken pot pie filling with any additional chicken. This week's weekend bonus is a batch of milk chocolate lavender cookies in case you're craving something sweet at the end of the week!

Prep:  No prep work this week! Most of these recipes can be made the day of, but if you're looking to get ahead on dinner you can make the pastry dough and filling for the chicken pot pie a day or two in advance. By the time Thursday rolls around you'll only need to assemble and bake!

TUESDAY Italian Fennel Orange Salad

WEDNESDAY Chicken Cutlet Sandwiches

Skip the Italian deli and DIY. This awesome sandwich is packed with a breaded chickencutlet, sauteed broccoli rabe, and finished with some pungent sharp provolone. Traditionally a Philadelphia staple. Sure, you could order at the local bodega or deli, but when you can make it yourself-you have it for days. THURSDAY Easy Chicken Pot Pie

One of the most comforting dishes I can think of is the classic chicken pot pie -and thankfully this recipe cuts down on the labor in doing so. Some people think of this as heavy, but it's all about moderation. Pack this baby up with lots of fresh veggies such as carrots, sweet peas, celery, and turnips-it's completely customizable to your preference. Make sure to pair it with a crispy leafed salad for a full balanced meal.

Don't be put off by the lavender; it's extremely faint and complements the milk chocolate's sweetness.
