Sunday Prep: Roasted Carrot Harissa Soup & Carrot Top Pesto

Start your prep on Sunday by making the pesto-go as far as making the soup a day early as well-it will give it a chance to sit and let the flavors meld (Soup always tastes better the second day anyway!). On Tuesday, take the same pesto and add it to your favorite pasta.

You’ll be using the carrot top pesto on a quick and easy pizza that comes together in no time. We’ve thrown in a few other meals using chicken and fish-feel free to change it up depending on what you are in the mood for this week.

End the week with a light salmon dish that we recommend making with roasted eggplant -feel free to change it up. The bonus wellness shot will help give you that extra immune boost throughout the week.

We guarantee this menu will make meal planning quick, cost-effective, and take a load off your shoulders during the busy work week.

Roasted Carrot Harissa Soup
By @andrealoretdemola

Turn a sheet pan of roasted carrots into a spicy bowl of hot soup with the help of a blender, coconut milk, and plenty of vegetable stock. The sweet roasted carrots and coconut milk mellow out some of the heat from the harissa, but feel free to add more spice if you can handle it!

Pomegranate-Roasted Eggplant with Garlic Yogurt and Walnuts
By @Saharegamil

A delicious and beautifully prepared Middle Eastern eggplant dish roasted in a tangy pomegranate molasses marinade. Don't skip salting the eggplant; salt draws out excess moisture, so they stay crispy rather than soggy while roasting. If you prefer a smooth yogurt, you can strain through a fine-mesh sieve before drizzling it over the eggplant.
