Get ready for a delicious week ahead!

We're starting off the week with fried pork cutlets with a citrus salad, not too heavy but indulgent enough to feel satisfied. On Tuesday let's do a soup day with this unique sweet potato soup recipe that has the addition of plantain. Wednesday is going to be a flavorful recipe for Korean-inspired chicken wings-we've paired this with a rainbow miso slaw but feel free to also make this with a big side of rice. End Thursday with @lisathompson's super delicious creamy mushroom pasta, made with only one pot to keep clean-up to a minimum. Enjoy this Dirty Iced chai this weekend (or every day this week!).

TUESDAY Plantain And Sweet Potato Soup

This sweet potato soup features the interesting addition of plantain. Using a green plantain will help to balance out the sweetness in this soup. Serve with crusty bread and a drizzle of double cream (or a dollop of sour cream works well here).

THURSDAY One-Pot Creamy Mushroom Pasta With Greens And Garlicky Breadcrumbs

This pasta recipe came to me one weeknight when I was trying to get dinner together and use up some odds and ends in my refrigerator; some goat cheese, a little heavy cream, the remnants of a bag of shredded cheese, and some greens from my CSA box that needed resuscitating. The end result turned out to be something much greater and more delicious than the sum of its parts: a comforting, one-pot dinner for 4 or 5 (depending how hungry you are!) that’s packed with veggies and topped with herby, garlicky, lemony breadcrumbs to cut through the richness.
