Soup for Sick Season! 

If you’ve been feeling under the weather or wanted to stay inside. We’ve put together a menu that starts the week off with a spicy carrot soup this week. We’ve curated 2 recipes to help you use up the pesto and to help save time and prep for the week ahead.

Sunday Prep: Roasted Carrot Harissa Soup & Carrot Top Pesto 

Start your prep on Sunday by making the pesto-go as far as making the soup a day early as well-it will give it a chance to sit and let the flavors meld (Soup always tastes better the second day anyway!). On Tuesday, take the same pesto and add it to your favorite gluten-free pasta. 


We’ve added a chicken taco recipe that you can use the same chicken in a Burrito bowl. Bowls, tacos, sandwiches and salads are a great way to mix and match your leftover ingredients for quick lunches and light dinners. 

End the week with a light salmon dish that we recommend making with roasted eggplant -feel free to change it up. The bonus wellness shot will help give you that extra immune boost throughout the week.
 

 We guarantee this menu will make meal planning quick, cost-effective, and take a load off your shoulders during the busy work week.

Roasted Carrot Harissa Soup

Turn a sheet pan of roasted carrots into a spicy bowl of hot soup with the help of a blender, coconut milk, and plenty of vegetable stock. The sweet roasted carrots and coconut milk mellow out some of the heat from the harissa, but feel free to add more spice if you can handle it!

Carrot Top Pesto

Carrot tops greens taste like parsley’s earthy-cousin which lends itself to be pretty versatile. This pesto will have an earthier texture and flavor but with the help of pasta water this pesto will perfectly slick any short pasta.

Chicken Tacos
