  • 2/3 cup semi-sweet chocolate
  • 2 teaspoons instant coffee powder
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/2 cup cocoa powder
  • 1/2 cup all purpose flour
  • 1/2 teaspoon salt
  • 1 cup chocolate chunks

Method

Recipe:

  • Step 1

    Melt the butter, semi-sweet chocolate, and coffee powder over medium heat.

  • Step 2

    Beat the sugars, eggs, and vanilla on high speed with a mixer until light in color. Add in the melted chocolate mixture and mix on low speed.

  • Step 3

    Fold in the cocoa powder, flour, and salt. Then fold in the chopped chocolate and chocolate chips for an extra glossy top crust.

  • Step 4

    Place the batter into an 8x8 inch pan lined with parchment paper and chill in the fridge for several hours to 2 days.

  • Step 5

    Once ready to bake preheat the oven to 350°F. Bake the brownies for 22-25 minutes.

    Allow to cool completely before slicing.

Tips for a Glossy Shiny Crust:

  • Step 1

    Dissolving sugar into the brownie batter is the key to developing that shiny crust.

  • Step 2

    Use powdered sugar instead of regular sugar. (1 cup granulated sugar = 1 ½ cups + 2 tablespoons powdered sugar). It makes them slightly cakey in texture.

  • Step 3

    Add chocolate chips to your batter to enhance the top crust.

  • Step 4

    Chill the batter! Putting it in the fridge for several hours to 2 days makes a huge difference. It improves the top gloss and gives a more enhanced rich chocolate flavor.
