Citrus Simple Syrup

  • 1/2 cup white sugar
  • 1/2 cup water
  • 1/2 large lemon juiced
  • 1 lime, zest and juiced

Method

Citrus Simple Syrup

  • Step 1

    Bring 1/2 cup sugar and water in a small saucepan to boil, stirring constantly. Simmer until sugar is dissolved, about 3 minutes. Remove simple syrup from heat, add lemon juice, lime zest and lime juice. Mix and allow to cool completely.

Watermelon Margarita

  • 3 cups watermelon, seeded and cubed
  • 6 tablespoons citrus simple syrup, or more, to taste
  • 1/2 cup blanco tequila
  • 1/4 cup lime juice
  • salt or sugar for rimming glasses
  • Crushed ice
  • 1 lime, cut into wedges and/or wheels

Watermelon Margarita

  • Step 1

    Puree watermelon in a blender or food processor. Add watermelon puree to a large pitcher with simple syrup, tequila, and lime juice and mix well. Add about 2-3 tablespoons of salt or sugar to a saucer or small plate. Moisten rim of glass with lime wedge and dip the rim into salt or sugar. Tap off any excess. Fill glass with margarita mixture and garnish with slice watermelon and/or lime.
