Yesterday's lunch was inspired by the Korean dish bibimbap. Of course mine was vegan, so no eggs or meat in my bowl. I cooked the rice and sauteed the shiitake mushrooms first. Then I put them in the oven (in an iron cast pan) until I got a nice rice crust at the bottom. I took the sizzling pan out and added the other veggies, soy sauce and sriracha. Can't go wrong with this. On another note, I am feeling very proud to have been featured by @thefeedfeed. I am sure you are following her feed already but if not, you are missing out. She posts the most creative dishes. Perfect source for inspiration.
