Summer Candied Oranges

ingredients

  • 4 cups Water
  • 4 cups Granulated Sugar
  • 1 cups Sugar For Orange Coating
  • 5 Clementine Oranges
  • 1 Ice Water

Method

  • Step 1

    Fill a large bowl with ice water and set aside.

  • Step 2

    Cut oranges into slices using a mandolin or knife.

  • Step 3

    Add 4 cups of water to a saucepan and bring to a boil over high heat.

  • Step 4

    Add the orange slices and then turn the heat down to simmer.

  • Step 5

    Let the orange slices simmer for 5 minutes. This removes the bitterness from the peel. You can also check one of the oranges to make sure they are just right.

  • Step 6

    Then quickly transfer the orange slices to the bowl of ice water, to stop them from cooking.

  • Step 7

    Add the four cups of sugar to the saucepan you cooked the oranges in. Bring the mixture back to a boil and stir until the sugar has dissolved completely.

  • Step 8

    After the mixture has come to a boil, reduce the heat back to medium and add the orange slices back into the saucepan.

  • Step 9

    Simmer for 45-60 minutes. Stir often to keep the slices coated.

  • Step 10

    Transfer the orange slices to parchment paper, cooling rack, or Silpat. Let them sit for up to 24 hours or until dry.

  • Step 11

    When the slices are dry, add sugar to the plate and dip both sides of the oranges in the sugar. You could also dip one side in dark or milk chocolate.
