ingredients
- 1 cup butter, softened
- 1 cup powdered sugar
- 2 large egg yolks
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon almond extract
- 2 1/2 cups all-purpose flour
- 1 cup almond flour
- 1/2 teaspoon salt
- 1/2 teaspoon ground cardamom
- 1/2 cup Nutella®
- Additional powdered sugar, for topping
Method
Step 1
In a medium mixing bowl, whisk together the all-purpose flour, almond flour, salt, and ground cinnamon. Set aside.
Step 2
In a large mixing bowl, cream together the butter and powdered sugar until fully incorporated. Mix in the egg yolks along with the vanilla and almond extracts.
Step 3
Finally, add half of the flour mixture and mix gently with a wooden spoon to avoid overmixing. Add the second half of the flour mixture and continue to mix until a dough forms.
Step 4
Separate the dough into two equal parts. Form each half into a disc about 1 inch thick and cover well with plastic wrap. Chill the dough in the refrigerator for at least 1 hour.
Step 5
Preheat the oven to 350°F and line 2 baking sheets with parchment paper. On a lightly floured surface, roll out the dough until it is about ¼ inch thick. Use a 2-inch cookie cutter to cut out the cookies and place them 2 inches apart on the lined baking sheets. Half of the cookies should be solid shapes (bottoms) and the other half should have cut-outs in the center (tops).
Step 6
Bake the cookies for 9-12 minutes until they appear dry with slightly golden edges. Remove them from the oven and allow them to cool completely. Lightly dust the cut-out cookies (tops) with powdered sugar. Evenly spread 1 tsp of Nutella® on each of the solid cookies (bottoms). Then, top each one with a sugar-dusted cookie to create a Nutella®-filled sandwich cookie.
