Don’t you just love a good, old fashioned “classic” soup? You know, the kind that fulfills a very specific craving, and creates a certain kind of comfort? . Classic French Onion Soup is that soup for me, and ever since I was a kid 🧒🏼, I loved ordering it whenever I saw it on a menu; so a while back I figured it was high time to create my own go-to recipe to have on hand for whenever the craving for it came. . Savory, beefy, broth-y, with that touch of sherry & that gooey, broiled lid of cheese over a toasted baguette slice (!!), this Classic French Onion soup is one for the repertoire. ❤️ . .

OK guys, so this one’s an oldie-but-a-goody, it’s my Spiced Moroccan Chicken Wrap with Grilled Eggplant, Tomato & Onion Chutney, + a spicy hummus! 😆😝😋🤤 . The flavor combination in this is ridiculous, and yes, there are several components to prepare (typical of my recipes, I know); but I promise you: it is worth your effort. (Swipe left to see.) . Healthy, juicy, won’t find this much love in a restaurant wrap. No way. So treat yourself ❤️. . .
A platter of something packed with vibrant colors and fresh, crisp textures is a platter that I would never be able to deny; which, I suppose, makes this platter of Chicken Kebab Wraps with Easy Tzatziki Sauce undeniable. . Creamy tzatziki that’s liberal on the garlic, and generously imbued with fresh dill; and juicy, lemony, simply grilled skewers of chicken become wrapped up all together with cool cucumber + tomato to make for this scrumptious meal. . It’s food at its best—simple, beautiful, flavorful...what more could anyone ask for? . .
There’s a brand new recipe up on the blog, and I’m very excited to share it with you because it’s so darn good! ? . You could say that this Rigatoni Meatball Soup is the sumptuous love child of a bowl of rigatoni pasta with meatballs + tomato soup; it’s so warming, cozy & comforting. . A few tender rigatoni are added to the bottom of your bowl, then the soup, which is filled with little meatballs and is generous on the garlic and herbs (and even a touch of red wine ?!), is ladled over top. . Finished with a sprinkle of mozzarella (that melts through out ?), this soup is only a little over 600 calories, and is filling as all heck! (Swipe through the photos to check it out.) . .
Folks, I’m a sucker for anything “peanut”, and simply adore Thai style peanut sauce. ? . And it was my love for said peanut sauce that inspired this utter rainbow of a salad, this Thai Chicken Satay Salad with Sweet Peanut Dressing, and I’m sharing it here with you, because I ❤️you! . With a touch of coconut milk, lemongrass, ginger, curry paste and a hint of lime, this is a salad I implore you to try, because, you know, it’s January, and you’re still trying to eat healthy, remember? ? . .
Thick, twisty, and slightly chewy noodles are quite my thing ?; there’s something so tastebud-tickling about them, something so deliciously satisfying. . These Chilled Garlic Sesame Udon Noodles with Bok Choy, Shiitake Mushrooms & Red Bell Pepper are super vibrant, healthy & fresh, and make for an awesome vegetarian meal. . The colors alone make me want to face plant, but those flavors in the dressing & the fact that it is SO easy to put together (!) is the hook! ?? .
