Chicken Khao Soi
Khao Soi // at boarding school outside of chaing mai the canteen would sometimes serve up this northern Thai curry and on those rare days, my cousins and I would stomp up to the second story cafeteria for a bowl (most of the other meals consisted of fish heads or chicken feet, or that's how my 17 yr old memory stored it...and I wasn't interested, to say the least). So if we weren't back in our home whipping up a pan of brownies for lunch (most days we were) you'd find us up with the other students, eating big bowls of chicken Khao Soi, made from a curry paste of fresh turmeric, coriander, garlic, ginger, lemongrass, makrut lime leaves, cilantro stalks and Bird's Eye chili. I can't believe I've waited this long, and this many years later, to make it myself. And my favorite part is still the lime and crispy fried noodles served on top.
