2 large eggs
2 1/4 cup flour
1 tsp baking powder
1 cup brown sugar or coconut sugar
1/3 cup cocoa powder
3/4 cup sugar
150g dark chocolate, chopped
8 Tbsp unsalted butter, melted
1 cup dark chocolate chips
2 Tbsp vanilla extract
Melt butter and dark chocolate chips in a bowl over a saucepan on a medium heat. Stir until smooth and set aside.
Preheat oven to 180 degrees celcius. Line a baking tray with baking parchment.
In a large bowl, stir together all dry ingredients, except the dark chocolate. Once mixed, add in the chocolate mixture. Mix in vanilla extract. Slowly, mix in eggs one at a time until cookie dough is formed. Fold in chocolate chips.
Form dough into balls, size can be dependent upon preference, and place onto the tray. Slightly flatten the top with the back of a spoon. Bake for 10-12 minutes. Allow to cool before serving.
