Asian Noodle Soup With Grilled Asparagus And Garlic Crusted Tofu
I don't even know what to call this... Except delicious! It's not pho & it's not ramen but it's a little of both too. Gluten free rice vermicelli noodles in homemade chicken broth with fresh ginger, grilled asparagus, smoked pepper & garlic crusted tofu, cilantro and avocado

I use organic, extra from nasoya tofu, I wrap it in a clean towel for 1 hour prior to prep. Then sliced in thick slices and laid it in a plate with bourbon smoked course black pepper & dried minced garlic & pink Himalayan salt. Turn over, gently press & cook in cast iron with coconut oil, on high.
For the rest of the dish, simmer broth with fresh minced garlic, soak noodles in warm water (5min), in cast iron, before tofu, grill asparagus. Then you just assemble.
Noodles first, then asparagus & tofu, pour over broth and add cilantro & avocado!
