ingredients

  • 1 cup almond milk
  • 1/4 cup ripe banana
  • 1/3 cup melted coconut oil
  • 1 1/2 cups oat flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 cup coconut sugar
  • 1/2 cup fresh blueberries

Method

  • Step 1

    Preheat oven to 400 degrees F

  • Step 2

    In a medium bowl mix flour, oat flour, coconut sugar and baking powder

  • Step 3

    In a separate bowl mix milk, mashed banana and melted coconut oil

  • Step 4

    Add wet ingredients to the flour mixture and mix togeth

  • Step 5

    Mix in blueberries

  • Step 6

    Add mixture to silicone baking cups placed on a baking sheet

  • Step 7

    Bake for 20-25 minutes, let cool
