  • 1/2 cup natural peanut butter
  • 2 tablespoons pure maple syrup
  • 1 tablespoon molasses (optional but enhances the Butterfinger flavor)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 cup gluten-free corn flakes, crushed
  • 6 ounces dark or semi-sweet chocolate

Method

  • Step 1

    Prepare the peanut butter mixture: In a small saucepan, combine the peanut butter, maple syrup, molasses, vanilla extract, and salt. Stir until well-mixed, then heat the mixture over medium-low heat until it slightly thickens. If you prefer, you can heat the mixture in the microwave instead.

  • Step 2

    Add the crushed corn flakes to the peanut butter mixture and stir until fully combined.

  • Step 3

    Line an 8x5-inch loaf pan with parchment paper. Pour the peanut butter and corn flake mixture into the pan and smooth it out using another piece of parchment paper. Place the pan in the freezer for several hours until the mixture hardens.

    Once the mixture has hardened, remove it from the freezer and slice it into bars. Melt the chocolate and dip each bar in the melted chocolate, ensuring each one is fully coated. Optionally, sprinkle the bars with sea salt for an extra touch.

    Place the chocolate-coated bars in the fridge until the chocolate hardens.

    Store them in the refrigerator for up to one week, or freeze them for several months for long-term storage.
