  • 2 tablespoons olive oil
  • 8 ounces sausage (spicy or mild)
  • 1/2 Spanish onion, diced
  • 5 garlic cloves, minced
  • 1 cup orzo
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon kosher salt
  • Red pepper flakes, to taste
  • 2 1/2 cups low-sodium chicken broth
  • 3 tablespoons Tuttorosso® Tomato Paste with Sweet Basil
  • 1 cup heavy cream
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon chili paste (optional)
  • Freshly grated Parmesan, for serving
  • Freshly ground black pepper, to taste

Method

  • Step 1

    Heat olive oil in a large sauté pan over medium-high heat. Add the sausage and let it cook undisturbed for about 2 minutes to develop a golden crust. Continue cooking, breaking it into smaller pieces, until fully cooked through. Remove from the pan and set aside.

  • Step 2

    In the same pan, add diced onion and cook until translucent, about 3–4 minutes. Stir in the garlic, then add Tuttorosso® Tomato Paste with Sweet Basil. Cook for 1–2 minutes to caramelize the paste and deepen the flavor.

  • Step 3

    Add the orzo and stir to coat in the tomato mixture. Pour in the chicken broth and bring to a simmer. Cook for about 10 minutes, stirring frequently, until orzo is al dente and most of the liquid is absorbed.

  • Step 4

    Stir in the heavy cream and cook for an additional 2–3 minutes until thickened slightly. Return the sausage to the pan and add chopped basil. Taste and adjust seasoning with salt, pepper, and optional chili paste.

  • Step 5

    Finish with grated Parmesan, more chili paste if desired, and freshly cracked black pepper. Serve hot and enjoy!
