ingredients
- 1 block extra firm tofu, broken in pieces
- 1 small onion, roughly chopped
- 2 lemongrass steams, sliced
- 4 garlic cloves
- 2 red chillies, chopped
- 1 teaspoon ground cumin
- 2 teaspoon ground coriander
- 1 tablespoon soy sauce
- 1/8 to 1/4 cup oil

Peanut sauce
- 1/2 cup crunchy peanut butter
- 1 cup coconut milk or cream
- 1/2 cup water
- 1 tablespoon sriracha or a chilli sauce
- 1 tablespoon soy sauce
- Juice of 1-2 limes

- Spring onions, sliced
- Crushed peanuts
- Chilli oil
Method
Step 1
Soak your wooden skewers in water for a few minutes. To a food processor add the onion, garlic, chillies, lemongrass, ground coriander, ground cumin, salt soy sauce and oil, process until a paste is formed, add broken tofu into a bowl and pour the mix over, mix well to combine, form your skewers and set aside to marinate (the longer the better)
Step 2
To make peanut sauce: stir all ingredients in a pan over low heat, until the mixture boils, remove from heat, the sauce will thicken on standing, add more water if needed.
Step 3
Cook your skewers, you can grill them or place in the oven, I used the oven - preheat to 200c, line a baking sheet and place the skewers, adding renano in marinade on top, slide into the oven for around 20 minutes or until the tofu is slightly burn on the edges.
Step 4
Serve with rice, pour some peanut sauce on top, garnish with sliced spring onions, crushed peanuts and chilli oil! Enjoy!
