Raw Cauliflower Tabouleh With Parsley, Cilantro, Mint & Lentils
"RECIPE: 1 large cauliflower washed and cut in florets
1/2 cup of green lentils previously soaked for three days or until beginning to sprout ( optional)
4 cups of Mixed Herbs (parsley, Cilantro and mint)
1 cup of finely chopped tomatoes
Salt and lime or lemon juice to taste

Either by hand or In the bowl of a food processor, chop the cauliflower into a coarse rice like texture, then place into a large bowl.

Finely chop all the herbs and carefully mix into the cauliflower.

Incorporate the lentil gently to the mix, then the tomatoes.

Season with salt and lime or lemon to taste and let it sit 15 to 30 minutes together in the fridge before serving."
