ingredients

  • 2 cups all purpose flour
  • 1/2 teasopon ground cloves
  • 1 teapsoons ginger
  • 1 teasopon cinnamon
  • 2 teasopon baking soda
  • 1/2 teasopon salt
  • 3/4 cup unsalted butter
  • 1/2 cup coconut sugar
  • 1/2 cup granulated sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 teasopon vanilla

Method

  • Step 1

    In a medium bowl, whisk together the flour, baking soda, ground cloves, ginger, cinnamon, and salt until combined.

  • Step 2

    In a large bowl or stand mixer, beat the butter and sugars together until combined and a creamy consistency. Approximately 2 minutes.

  • Step 3

    Using your mixer (hand or stand) mix in the molasses to your butter and sugar bowl on medium speed until combined.

  • Step 4

    On low speed, beat in the egg and vanilla until smooth consistency is reached. Remember to continuously scrape the sides of your bowl so all ingredients are incorporated.

  • Step 5

    Fold in the dry ingredients, combining a little portion at a time, until just combined. Don’t over mix!

  • Step 6

    Cover the dough in plastic wrap and chill in the fridge for 2 hours (minimum).

  • Step 7

    Once cookie dough has chilled and can easily be formed, preheat your oven to 350 degrees.

  • Step 8

    Roll the dough with your hands into 1 inch balls. Roll the balls in granulated sugar. Place the balls on a parchment lined cookie sheet, spaced 2” apart.

  • Step 9

    Bake for 10-11 minutes until edges are set.

    Let cookies rest on the cookie sheet for 5 minutes and then remove to let cool on a cooling rack.
