Sriracha, Brown Butter & Parmesan Omelette
Brown butter . Sriracha . Parmesan . Egg . Tater tot....yes that's right. I ? #tatertots! I know you're a little jealous. ?
1 egg 1 egg yolk 2 tsp Sriracha 2 tsp Parmesan, grated 2 tsp brown butter* Salt Beat the egg, yolk, Sriracha and a pinch or two of salt together in a small bowl. Place the butter in a small omelette or nonstick pan and melt over medium heat. Careful not to burn the butter, swirl to coat pan. Pour in egg mixture and swirl to evenly coat the pan and turn the heat down to low. Once the egg is cooked at the edges turn the fire off. Sprinkle on Parmesan and another pinch of salt on top and let the egg cook through from the residual heat in the pan. Once it's cooked through but still a little soft in the center fold into thirds and serve with tater tots and extra Sriracha.
