  • 1 cup peanut butter
  • 1 cup brown sugar
  • 2 tablespoons melted coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup mini chocolate eggs

Method

  • Step 1

    Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

  • Step 2

    In a large bowl, combine the peanut butter, brown sugar, melted coconut oil, egg, vanilla extract, and salt. Stir until the mixture is thick and well combined. Gently fold in the mini chocolate eggs.

  • Step 3

    Use a medium-sized cookie scoop to portion the dough onto the prepared baking sheets, spacing the cookies about 2 inches apart.

  • Step 4

    Bake for 8 minutes or until the cookies are golden brown. Allow them to cool on the baking sheets for 10 minutes before serving.
