ingredients
- 2 cups oats
- 2 cups plant milk
- 1/4 cup almond butter
- 2 tablespoons maple syrup
- 2 teaspoon vanilla
- 1 large carrot, grated
- 1/4 cup cranberries
- 1/4 cup chopped walnuts
- 2 tablespoons chia seeds
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- Dash of salt

Icing
- 300 grams silken tofu
- 1/2 cup water
- 2 1/2 cups Vegan vanilla protein
Method
Step 1
Add all of your ingredients into a baking dish! I used a 7x10 inch dish but an 8x8 will work as well!
Step 2
Bake your oatmeal at 400f for 35-40 minutes.
Step 3
Meanwhile make your protein icing. Blend up the tofu, water and protein powder. Add more protein if you’d like a sweeter icing. Add water to thin as needed, or add protein powder if it is too thin. Spread your icing on top and enjoy!
