The star of this dish are the "scallops" made from king oyster mushrooms. It's the perfect quick and satisfying vegan dinner for any night of the week. Serve with your favorite risotto!
- 4 king oyster mushrooms
- 2 tablespoons olive oil or vegan butter
- Salt & pepper
Slice mushroom into 1”thick discs and score both side with sharp knife in crisscross pattern.
Heat oil over medium high heat and gently place “scallops” into pan. Sear both sides, season with salt and pepper. Serve with your favorite risotto.
