ingredients

  • Olive oil
  • Pinch chili flakes
  • 1/2 tablespoon onion diced
  • 2 carrots diced
  • 1 celery diced
  • 1 head roasted garlic
  • 1 large heirloom tomato chopped
  • Handful cherry tomatoes
  • 1 can crushed tomatoes
  • 1 1/2 cups red lentils rinsed
  • 1 cup water
  • 1/2 cup fresh basil
  • Sea salt cracked pepper

Method

  • Step 1

    Heat olive oil in a large pot or Dutch oven. Add chili flakes, onion, carrot and celery.

  • Step 2

    Cook for several minutes until carrot and celery start to soften. Add fresh and canned tomatoes and mix to combine. Add in lentils and mix well. Add in 1 cup water and bring to a boil.

  • Step 3

    Reduce to a summer and cook for 20 minutes until lentils are done. Add in roasted garlic, fresh basil, sea salt and cracked pepper too taste. Use and immersion blender to blend. Some people chunks are perfectly fine. Drizzle with oil to serve.
