What really takes these flavor packed noodles to the next level is the creamy nutty peanut butter sauce made with sesame oil, garlic, and sriracha. These noodles are spicy, creamy, nutty, tangy and a little sweet.

ingredients

  • Rice noodles of choice
  • 4 tablespoons olive oil, divided
  • Pinch chili flakes
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 small red pepper, diced
  • 6 cremini mushrooms, sliced
  • 1 medium sized eggplant, cubed
  • 1/2 bock tofu pressed and patted dry
  • Handful baby spinach
  • Sesame seeds
  • 1 green onion, sliced
  • Roasted peanuts

Peanut Butter Dressing

  • 1/4 cup crunchy peanut butter
  • 2 cloves garlic
  • 4 tablespoons tamari
  • 1 tablespoons sesame oil
  • 1 teaspoon mirin or rice wine vinegar
  • 1 tablespoon sriracha
  • 1/4 cup water
  • Pinch chili flakes
  • Mix everything in a food processor and pour over noodles.

Method

  • Step 1

    Pre-heat oven to 400 convection if you have. Line 2 baking sheets with parchment paper.

  • Step 2

    Wash eggplant and cut into cubes leaving skin on or peeled if you prefer. Drop eggplant onto baking sheet. Drizzle with 2 tbsp oil and season with sea salt and pepper. Toss to coat.

  • Step 3

    Place in oven and bake for 20 minutes. In the meantime, toss cubed tofu with 1 tbsp olive oil and season with sea salt and pepper. Spread onto second baking sheet. Once the times goes off for eggplant, flip it and place tofu and eggplant in the oven. Bake for another 20 minutes.

  • Step 4

    While tofu and eggplant are baking, boil water and generously salt it. Cook noodles according to package. Reserve 1/2 cup of noodle water before draining. While noodles are cooking heat 2 tbsp oil and chili flakes in a large pan.

  • Step 5

    Add onion and saute until translucent. Add mushrooms and garlic and cook until mushrooms start to lose their moisture. Add more oil if necessary. Add in spinach, tofu and eggplant. Mix to combine.

  • Step 6

    Finally, add the noodles and the sauce. Toss everything together using tongs. Once well incorporated transfer to bowls and garnish with green onion, and sesame seeds.
