Garlic confit is a classic technique where you cook garlic in olive oil. The galric infused the oil while also cooking the garlic. Use the oil when you cook and shmear the soften garlic on toast.

ingredients

  • 3 whole heads of garlic, peeled
  • 1 cup olive oil

Method

  • Step 1

    Add to a small pan and cook for 45 minutes over medium low heat. Keep your eyes on it. You want them to be a caramel color and not burnt. Add to a jar, cover and place in the fridge. Smear on toast, use in dressings, add to sauce.
