1 kg Okra 2 1/2 cups tomatoes, diced (blitz in food processor) 2 cups tomatoes,diced 2 medium onions,diced 1 whole garlic,minced 2 small packs(135g) Heinz tomato paste 2 cups water 6 tbsp fish sauce 3 tbsp brown sugar Salt and pepper, to taste 1. Sauté the onion,garlic and 2 cups diced tomatoes in olive oil.add in the tomato paste.Season with salt and pepper. 2. Put in the 2 cups of water, fish sauce and sugar. Bring to a boil and let simmer. Until the sauce thickens. 3. Add the okra. Cover the pot and let simmer until the okra is cooked according to your preference. I like mine soft and tender for this. 4. Meanwhile, blitz the 2 1/2 cups of tomatoes in a food processor. Then add it to the pot, cover the lid. Turn off the heat. Serve with rice or pandesal. Garnish with parsley. Add some sili labuyo/or other kinds of chili if you want it spicy.
