ingredients
- 1 1/4 cups all purpose flour
- 1/4 cup sifted cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 ripe bananas
- 1/3 cup melted butter or margarine
- 3/4 cups packed light brown sugar
- 1 room temperature large egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Method
Step 1
Preheat oven to 350 degree F. Grease a standard loaf pan and cut a piece of parchment paper to fit the bottom.
Step 2
In a medium bowl combine 1 and 1/4 cup of flour, 1/4 cup of cocoa, 1 teaspoon of baking soda, and 1/2 teaspoon salt. Set aside.
Step 3
Mash 3 bananas in another bowl. Add 1/3 cup of melted butter or margarine and combine. Stir in 3/4 cups of packed light brown sugar, 1 egg, and 1 teaspoon of vanilla extract.
Step 4
Add the dry ingredients to the wet and mix until just incorporated. Stir in 1/2 cup of chocolate chips. Pour batter in your prepared loaf pan and sprinkle a few extra chocolate chips on top.
Step 5
Bake for 55-65 minutes or until a toothpick inserted in the centre comes out clean. Let cool completely in pan on wire rack before removing.
