ingredients
For the beef filling:
- 1 pound ground beef
- 3 tablespoons Red Gold Ketchup
- 1 small onion, finely grated
- 3 garlic cloves, minced
- 1 small bunch (about 1 cup) fresh parsley, finely chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- Kosher salt, to taste
- Freshly ground black pepper, to taste
ingredients
For the sauce:
- 1/2 cup plain yogurt
- 2 tablespoons Red Gold Ketchup
- 1 tablespoon fresh lemon juice
- 1 teaspoon garlic powder
- Kosher salt, to taste
- Freshly ground black pepper, to taste
ingredients
For assembly:
- 4 pita breads, halved to make pockets
- Olive oil (or melted butter), for brushing
Method
Step 1
In a large bowl, combine the ground beef, ketchup, onion, garlic, parsley, cumin, cinnamon, salt, and pepper. Mix thoroughly until well combined.
Step 2
Gently open each halved pita and fill with about 3–4 tablespoons of the beef mixture, pressing it flat so it spreads evenly inside the pocket.
Step 3
Heat a large skillet or grill pan over medium heat. Brush the outsides of the filled pitas with olive oil or melted butter. Cook for 3–4 minutes per side, pressing gently with a spatula, until crispy and golden brown.
Step 4
Meanwhile, prepare the dipping sauce. In a small bowl, whisk together the yogurt, ketchup, lemon juice, garlic powder, and a pinch of salt and pepper. Adjust seasoning to taste.
Step 5
Slice each Arayes into wedges and drizzle with the sauce before serving.
