Za'atar Eggs with Garlicky Tomatoes

Meet your new favorite breakfast bowl. This dish is like Turkish Eggs in bowl form. Greek yogurt is topped with garlicky tomatoes, soft boiled eggs, za'atar and fresh parsley.

ingredients

  • 3/4 cup Greek yogurt
  • 1 clove garlic
  • 1 teaspoon salt
  • 1 tablespoon garlic olive oil
  • 1/2 cup cherry tomatoes
  • salt and pepper, to taste
  • 2 eggs
  • 1 1/2 tablespoons butter
  • 1 teaspoon aleppo
  • chopped fresh parsley, to garnish
  • za'atar seasoning, to taste
  • toasted bread, buttered

Method

  • Step 1

    Into a heatproof dish add in 3/4 cup greek yogurt.

  • Step 2

    Grate in 1 garlic clove into the yogurt along with 1 tsp salt. Mix together.

  • Step 3

    Over a double boiler place the greek yogurt bowl over the heat and stir constantly to warm through. Set bowl aside.

  • Step 4

    Into a saucepan, pour in 1 tbsp of garlic olive oil over high heat. Add in 1/2 cup of cherry tomatoes. Season tomatoes with salt and pepper. Allow to cook until the tomatoes are bursting - about 12-15 minutes.

  • Step 5

    Soft boil 2 eggs into a small saucepan. Boil eggs for 7 minutes and then place into a bowl with ice and water to cool. Peel eggs after 5 minutes of being in the water and set aside.

  • Step 6

    Place greek yogurt into a bowl and spread all around. Place all the tomatoes into the bowl.

  • Step 7

    Into the same pan that you cooked the tomatoes in, place 1.5 tbsp of butter along with 1 tsp of Aleppo pepper. Allow to sizzle and cook, about 3 minutes.

  • Step 8

    Place peeled eggs into the dish with the greek yogurt and tomatoes. Pour the Aleppo pepper butter sauce over everything.

  • Step 9

    Scatter with parsley and za’atar all over the dish and serve with toasted-buttered bread.
