ingredients
- 1 cup quinoa, rinsed
- 2 cups chicken broth
- 1/2 cup California Walnuts, chopped
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Method
Step 1
In a medium saucepan, bring the chicken broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15-20 minutes until cooked and liquid is absorbed.
Step 2
Remove from heat and let quinoa cool.
Step 3
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper for the dressing.
Step 4
In a large mixing bowl, combine quinoa, walnuts, avocado, tomatoes, red onion, and parsley.
Step 5
Pour dressing over the salad and toss well.
Step 6
Serve and enjoy!
