I’m starting to incorporate more plant-based foods into my diet, and of course, what’s better than a plant-based cheese that still has the same dimension and flavors as dairy cheese 🙌🏼.
When I’m really craving a hearty sandwich, like this bad boy, I add a couple of Vevan P'Jack Melts to the mix for the same spice and bite that dairy jack cheese has. Totally nut & soy-free, same consistency, what could be better?

ingredients
- plant-based butter
- 2 tablespoons fig preserves
- 2 slices sourdough bread
- 2 slices Vevan P'Jack Melts
- 1 handful of arugula
- 1/4 honeycrisp apple, sliced lengthwise
Method
Step 1
Heat a cast iron skillet on low heat with plant based butter.
Step 2
Spread one slice of bread with half the fig preserves, top with P’Jack-Melts and arugula. Place in skillet and allow to slowly melt, 5-8 minutes. Top with apple slices.
Step 3
Spread remaining preserves on second slice of bread. Place bread, preserves-side down, on top of apple slices to create a sandwich, pressing firmly with a spatula. Flip and cook on the second side until bread is golden brown and the cheese is fully melted. Enjoy!
