This Tangerine Apple Cider Cocktail, or rather, a holiday mocktail, is the perfect elevated at-home mixology drink for any occasion... and the entire family will love it. Of course, if you need it spiked, we've got that covered too. It's simple to throw together, doesn't require a long shopping list and the flavor combo is on point!! I like to pretend I'm adventurous in the kitchen, but most days I'm more predictable than anything. Mixed it up this week with make ahead salads in three different flavors and recipes. I just polished off my last one and LOVED every single one of them. It was just pour, stir and eat for lunch (and the fact that I just finished lunch at 4pm should tell you how much I need easy lunches, haha!). When life isn't all rainbows ???? and unicorns ????... make some! Ice cream that is. ????????????????. . . * 2 cups whipping cream * One 14-ouce can sweetened condensed milk * 1 teaspoon vanilla * Food coloring * Sprinkles or edible glitter . Gather up your ingredients (the list is seriously short!) and get ready for the magic to unfold in your kitchen. 1. In a large mixing bowl, beat the whipping cream until peaks form (it will start to look like cool whip). 2. Pour the can of sweetened condensed milk & vanilla into the whipped cream, and fold the whipped cream and condensed milk together until combined. 3. Separate the ice cream 4 bowls. Add 4 drops of your preferred food coloring choice to each bowl and mix. Add more food coloring as needed to reach your desired color. 4. Using a standard loaf pan, layer the ice cream. 5. Run a butter knife or popsicle stick through the ice cream a few times in each direction to swirl the colors together a bit. 6. Top the ice cream with sprinkles or edible glitter (because we all know unicorns are glittery). 7. Cover the loaf pan with plastic wrap and freeze for 8 hours to overnight, or until the ice cream has set up and you’re ready to serve!

I just learned that today is #nationalpistachioday (yep, totally a day for everything!), and while you could eat the nut, you could also enjoy a creamy bowl of pistachio ice cream in celebration OR chop them up and top a donut like we did!
