  • 1 1/2 cups (187 grams) all-purpose flour
  • 1 teaspoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1/2 cup (115 grams) softened unsalted butter
  • 1/4 cup plus 2 tablespoons (75 grams) granulated sugar
  • 1/3 cup plus 1 tablespoon (79 grams) light brown sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 tablespoons all-purpose flour
  • 1/2 cup (87 grams) chocolate chunks
  • 3 tablespoons cocoa powder
  • 1/2 cup (87 grams) chocolate chunks

Method

  • Step 1

    In a medium bowl, whisk together the all purpose flour, cornstarch, baking soda, baking powder, and salt. Set aside.

  • Step 2

    In a separate large bowl, cream the softened butter with granulated sugar and brown sugar using a whisk or hand mixer until smooth and well combined.

  • Step 3

    Add the egg and vanilla extract, and continue mixing until the mixture is light and fluffy.

  • Step 4

    Gradually add the dry ingredient mixture to the wet ingredients. Mix until the flour is just incorporated, and no streaks remain.

  • Step 5

    Divide the dough into two equal portions.

  • Step 6

    To the vanilla dough, add the additional all-purpose flour, mix, and then stir in the chocolate chunks.

  • Step 7

    To the chocolate dough, add the cocoa powder, mix, and then stir in the chocolate chunks.

  • Step 8

    Take small portions of the vanilla dough and chocolate dough, and combine them by layering vanilla and chocolate dough balls on top of each other. Gently roll them together to form a single marble-patterned dough ball.

  • Step 9

    For extra thick cookies, refrigerate the dough balls for 1 hour before baking.

  • Step 10

    Preheat the oven to 350°F.

  • Step 11

    Place the dough balls on a baking tray lined with parchment paper, leaving space between each cookie.

    Bake for 10-13 minutes, or until the edges are set but the centers are still soft and slightly underbaked.

    Allow the cookies to cool on the baking sheet for 7-10 minutes before transferring to a wire rack to finish cooling.
