ingredients

  • 1/2 cup salted butter+ 1tbsp melted butter
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp vanilla bean paste
  • 1 large egg
  • 1 1/4 cups plus 3 tablespoons all-purpose flour
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp baking soda
  • 1 cup mini marshmallows
  • 1 1/2 cups sweet potato chips

Method

  • Step 1

    Line 2 baking sheets with parchment paper and set aside.

  • Step 2

    Brown 1/2 cup butter in a saucepan then add in 1tbsp butter. Allow to cool to room temp.

  • Step 3

    Beat the butter and sugars together for 1-2min. Add vanilla and egg; mix until combined and thick.

  • Step 4

    Mix in the flour, baking soda, and spices until fully combined. Fold in the marshmallows and sweet potato chips.

  • Step 5

    Using a 1/2 cup cookie or ice cream scoop, place 6 cookies on each baking sheet leaving 2in. room between each to spread a little. Place cookies in the fridge for 15-20min.

  • Step 6

    While cookies are chilling preheat the oven to 350°F.

  • Step 7

    Bake for 10-12 min or until edges are golden.

  • Step 8

    Allow to cool on the tray for 5 minutes and then transfer to wire rack to finish cooling.
