- 1 cup dark chocolate, chopped
- 3/ 4 cup plus 1 tablespoon heavy cream
Place the chocolate in a large bowl. Set aside.
Bring the cream to a simmer in a medium saucepan. Pour hot cream over the chocolate and mix with a wooden spoon or spatula until the chocolate is completely melted.
Cover with plastic wrap placed against the surface of the ganache and refrigerate until use.
