ingredients

  • 1 can black beans
  • 1 can tomatoes
  • 1 red onion
  • 4 cloves garlic
  • 1 tablespoon smoked paprika
  • 2 teaspoon cumin
  • 2 teaspoons cilantro
  • 1 tablespoon olive oil
  • 2 tablespoons tomato purée
  • 1 tablespoon maple syrup or brown sugar
  • 1 large handful of cilantro
  • Juice of one lime
  • 2 tablespoons nut butter

Method

  • Step 1

    Finely chop onion and mince the garlic. Heat oil in a pan and sauté with a pinch of salt until fragrant

  • Step 2

    Add all the spices and sauté for 2 mins more, then add the tomato purée, mix this in and then add the black beans and tin of tomatoes

  • Step 3

    Add the nut butter and maple syrup or sugar, simmer slowly for 5 minutes until reduced a little (but not too much) take off the heat, squeeze lime and garnish with lots of fresh cilantro
