Beat your Monday blues with some homemade Cashew Butter and Chia Blueberry Jam Cups??? Huge thanks to @legendaryfoods for sending us some samples of their amazing nut butter! For these, we used their Blueberry Cinnamon Bun Cashew Butter (no added sugar) and it was the perfect texture???? If you are interested in the chocolate recipe, check back a few posts (the chocolate cups with fruit) to find our recipe. To make these, pour a layer of chocolate, let harden, then a layer of nut butter, a layer of chia jam, and another layer of chocolate. They make a perfect snack!

Cashew Butter and Chia Blueberry Jam Cups


Raw Chocolate


Ingredients:


2.5 cups of cacao paste


2 cups of cacao butter


1/2 cup of maple syrup


1 tbsp vanilla extract


pinch of sea salt


1 tsp acai powder (optional)


Cashew Nut Butter


Blueberry Chia Jam


Chop and melt (in double boiler) cacao paste and cacao butter, then whisk in maple syrup (or other liquid sweetener), vanilla extract, sea salt and optional acai powder. Whisk ingredients until very smooth.


To make the cups; pour a layer of chocolate into a cupcake mould & let it harden in the fridge. Next a layer of cashew nut butter, a layer of chia jam, and another layer of chocolate. Place in the fridge to harden & remove a few minutes before serving.
