These baby blueberry galettes are the perfect for spring and summer entertaining and require minimal ingredients for a quick and easy fruit forward dessert.

ingredients

  • 3-4 frozen pie crusts, defrosted
  • 3 1/2 cups fresh or frozen blueberries
  • 1/3 cup white sugar
  • 2 1/4 tablespoons cornstarch
  • 1/8 teaspoon cinnamon
  • 1 lemon, zested
  • 1 egg, for egg wash
  • Sliced almonds, for garnish
  • Turbinado sugar, for garnish

Method

  • Step 1

    Preheat oven to 400º and line two baking sheets with parchment paper.

  • Step 2

    In a large bowl, combine the sugar, cornstarch, cinnamon and lemon zest. Add the blueberries and toss to evenly coat. Set aside.

  • Step 3

    Remove pie crusts from shells and flatten on a floured surface. Using a bowl or small plate, trace and cut out 8 4-5 inch circles. Reserve scraps and repeat.

  • Step 4

    Fill the center of each circle with the blueberry mixture and crimp the edges (dip fingers in water while crimping to help the dough maintain the shape). Transfer galettes to the prepared baking sheets.

  • Step 5

    Brush galettes with egg wash and sprinkle with almond slices and turbinado sugar. Bake for 30-35 minutes, until crust is golden and filling is bubbling. Serve with ice cream and enjoy.
