ingredients
- 2 pound cut into 1-inch cubes chicken breast
- 2 large beaten eggs
- 1 1/2 cups crushed whole wheat crackers
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teasopon salt
- 1/4 teaspoon black pepper
- 2 tablespoons melted salted butter
Method
Step 1
Preheat the oven to 375°F and line a baking sheet with parchment.
Step 2
In a shallow dish, combine the cracker crumbs and spices. Add the beaten eggs to a separate shallow dish.
Step 3
Dip the chicken pieces, one at a time, into the eggs and then coat in the cracker crumbs. Place the coated chicken pieces onto the prepared baking sheet, leaving about a ½-in. of space between each.
Step 4
Brush or dab each cracker-crusted chicken nugget with the melted butter.
Step 5
Bake the chicken nuggets for 20-25 minutes, until they are golden and have an internal temperature of 165°F.
Step 6
Serve with ketchup or other desired dipping sauce.
