For the Cakes
ingredients
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1 cup strawberries, pureed
- 1/2 cup Eagle Brand® sweetened condensed milk
- 1 cup milk
- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
For the Frosting
ingredients
- 1/2 cup strawberries, pureed
- 1/4 cup Eagle Brand® sweetened condensed milk
- 5 cups confectioners sugar
- 1/2 cup butter, softened, cut into 1/2 inch chunks
For the Cakes
Method
Step 1
Preheat oven to 350°F. Grease 3 (7-inch) cake pans. In a large bowl using hand mixer, cream together softened butter and granulated sugar until light and fluffy, 3-5 minutes. Add in eggs one at a time, mixing each until incorporated. Stir in the vanilla, strawberry puree, sweetened condensed milk and milk.
Step 2
In a medium bowl, sift together all-purpose flour, baking soda, baking powder, and salt. Fold into the batter until just combined.
Step 3
Pour and distribute batter evenly into the prepared cake pans and bake for 20-30 minutes, it is done when a toothpick inserted in the center comes out clean. Set aside and allow to cool before removing from their pans.
For the Frosting
Step 1
In a large bowl using a hand mixer, blend pureed strawberries and Eagle Brand Sweetened Condensed Milk on low speed until no streaks of pink remain. Add in the first two cups of icing sugar and continue to mix on low speed.
Step 2
Once incorporated, reduce to medium speed and add the remaining icing sugar one cup at a time. Turn off mixer and scrape down sides of the bowl. Return mixer to medium speed and add in the softened butter. When all ingredients have been mixed in, increase speed to high for fluffy frosting.
To assemble:
Step 1
Level the cakes if risen in the centre. Using a serrated knife, cut horizontally around to desired height of each cake. Spread a dollop of frosting in the middle of a cake board, and lay the first cake layer on top.
Step 2
Spread about a fifth of the frosting of the top of the layer and smooth out until even and covering any crumbs. Place the next cake layer on top and repeat. Layer on the last cake and spread frosting to cover the top. Use the remaining half of the frosting the spread evenly around the sides of the cake, covering any crumbs or holes.
Step 3
Decorate as desired. Refrigerate until ready to serve.
