Tomato And Roasted Red Pepper Soup
RECIPE: <br> 1 white onion chopped <br> 2 cloves garlic, minced <br> 2 cans unsalted diced tomatoes <br> tomato paste 1 tbs Siracha <br> 2 cups vegetable stock <br> 1 whole roasted red pepper. <br> <br> (1 white onion chopped, 2 cloves garlic, minced) < sauté with olive oil, salt and pepper. Add 2 cans unsalted diced tomatoes, 2 tbs tomato paste, 1 tbs Siracha, 2 cups vegetable stock, 1 whole roasted red pepper. Bring to boil, then down to simmer for 20 mins and then blend with immersion blender or pour into standard blender in two parts. <BR> Serve in bowls & top with parmesan & chives.
