Caramelized Onion, Chives, and Pancetta Potatoes Gratin
I’d like to introduce you to the ultimate caramelized onion and pancetta potatoes gratin. Caramelized onions, crispy pancetta, chives, garlic, gruyere AND parmesan cheese are lovingly tucked into each layer of potatoes. I use a mandolin to thinly slice the potatoes and bathe them in cream that is infused with fresh thyme and whole crushed garlic cloves. And I top the crispy potatoes with crunchy panko breadcrumbs and of course more cheese. Then it’s baked to golden brown delicious perfection.
